Sometimes I go on vacation and make mango cheesecake bars

It first started with surprise concert tickets that Pat had bought! Ironically I kept wanting to plan different stuff for this same weekend all month...Pat had to tell me over and over that we were going to a Paramore concert and that we already had plans for that weekend! oops!


Then one of my co-workers asked me to make a wedding cake and I so wanted to do it!

Patricks Response via email:
"Honey, I am very happy that your cake stuff is going well. I think you have definitely come a long way and I enjoy watching you grow in your skills and try new things. You've been getting a lot of requests lately, and I imagine that must feel good!
Concerning the wedding cake for the weekend of the July 26th, could you possibly give me more details on what needs to be done. Have you been given any guidelines on colors or styles? Any relevant Pinterest links?
I was hoping we could spend a nice long weekend at the beach, but if we are not going to go, I guess it is better to know now since we didn't book our hotel. However I would still like to go to the concert on Saturday night."
Later that day the guy that had asked me about the wedding cake said that his fiancehad a family member who was "hell bent" on making there cake - Problem solved!!! I love when things just work out! (that rarely happens for me!)

So later that day Pat and I booked our hotel!!! And had a great weekend! Visited St. Pete Beach, Indian Rocks Beach, and Clearwater Beach! We played a giant connect four game at the Post Card Inn, swam, watched beautiful sunsets, visited a bird sanctuary, met a friendly brown pelican who was not a resident of the sanctuary but totally wanted to be, and then we saw Winter from the Dolphin tale movie!!!! And on the last day I went to the Paramore Concert with my honey! Then I came home and made some mango cheesecake bars for work. Yay! I Made An Elephant!





I was asked to possibly make an elephant cake for October...Patrick usually models my more complicated characters for my cake, but lately he has been so engulfed in model aircraft that he is hard to track down. This concerns me because I've been asked to make at least two more Disney's Frozen themed cakes... and that means that I need three Olafs! - and he made my Olaf for that that cake! I guess it is time for me to learn. So I decided not to bother him with the elephant project that I have coming up and try it out myself. This was my first attempt prototype! It only took me about ten minutes to make! I can't wait to try to perfect it!
