Chicken Chili yum yum in the tum tum!

This was my fav when I worked graveyard shift! Pat really really likes it too! 

Step one: Aquire crock pot/slow cooker

Step two: Go to Publix after work at 0730 a.m. Parking will be easy. The store will be empty and blissful. Everystock boy will say hello ma'am. Nobody will run over you with a shopping cart like they do at 5p.m. 

Get these things:

slow cooker liner (in the plactic wrap section at Publix) so there will be no cleanup 😊

Aquire: boneless skinless chicken breast about 2 pounds, 2 cans of kidney beans, 2 cans of black beans (I use bushes seasoned recipe black beans), 1 can corn kernels, one can rotel tomatoes the cilantro and lime kind, one can hunts diced tomatoes, one small can hunts tomato sauce, one small can of hot and spicy V8, one packet taco seasoning ( I use old elpaso mild), TableSpoon of chilli powder, TEA-spoon of cumin, teaspoon of salt, teaspoon of black pepper, teaspoon garlic powder

Step three: stay awake

I blend my rotel because patrick doesn't like onions so I make them disspear but I don't suppose you have to. 
Open all your toe-matter products pour them in your crock pot and add all of your seasonings and whole packet of taco seasoning at this time. Mix with spoon if you want.
Open all your beans and corn put them in a strainer and rinse them and drain them a bit - you can also just rinse and drain them from the can. Put all that in your pot too.
Open your chicken inspect for gross looking chicken pieces which there usually are not many with the boneless skinless. Cut away imperfections and put beautiful chicken in crock pot. I poke the chicken down in the pot so it is covered with everything else.
Turn you crockpot on high (make sure it is plugged in...yep I did that once with a pot roast 😞 so sad) 
Let cook for 6 hours WHILE YOU GET SLEEP! YAY!
6-7 hours later wake up because house will smell good or husband/boyfriend will be shaking you out of sleep coma trying to wake you up because the house smelling good is making him hungry. Spoon out chicken on to paper plate shred with fork and this will be easy; chicken will be tender. Put chicken back in pot and stir chilli! Sometimes I add a teaspoon of cornstarch if it is too soupy but it is a preferance thing. 

Next EAT yummy chilli...it is healthy and delicious full of protein and fiber and flavor all on its own but if you want to make it evil you can sprinkle a little cheddar cheese on it eat it with SCOOPS TORTILLA CHIPS....which is what the Patrick loves to do. I also took some to work one time and we ate it with the scoop chips like it was a dip. It is very yummy.

Last step thow away your crock pot liner, load dishwasher, pack yummy leftovers and get ready for work !
